Orange, fluffy and delicious Mexican rice

Ingredients:

1 cup rice

1/4 cup oil

2 cups water

1 carrot, diced(optional)

1 / 2 onion

3 tablespoons tomato puree (or more to taste)

2 cloves garlic (or garlic salt)

Bouillon powder (chicken & tomatoe flavored or just chicken-preferably you’d have Real chicken broth which makes this dish DELISH, but if not the buillon is okay too)

Directions:

START COOKING

okay so to start soak rice in hot water about 10-15 minutes.

Cut up onions (I do big pieces so I can pick it out later lol).

Cut up garlic to melting size thin pieces so it melts in the grease instead of burns (you can just use garlic salt as well)

fill the whole bottom of your pan with cooking oil (hey no one said my recipees were healthy, I’m Mexican!) and a bit more oil after that like hmm enough to wet a grain of rice all the way. (I never measure sory)

Fry rice in oil until golden brown. Drain the oil and add a bit over a 1/3 of a can of tomatoe sauce.

Continue to fry a bit(like a minute or two stirring it all together).

Add water, carrots, (you can leave the carrots out if you want-I do most of the time) salt and add broth and let simmer until no liquid is hardly left (DO NOT stir after the first 6 minutes of cooking or you will have soggy rice!!!!!)

NOTE: It is very tasty, fluffy and delish!!!!!! This is the typical mexican rice that goes with our dishes~Enjoy with love Holly
