Beef chorizo and eggs


Chorizo is a spicy mexican crumbly like sausage. You can find a mild version of it in the store as well as pork. Pay attention when you buy it to make sure you get the BEEF kind.

eggs, a pan, slight bit of oil (enough to ‘wet’ the bottom of the pan) and chorizo

put cooking oil on the bottom of the pan, warm up on a low setting- squeeze about 1/2 of the chorizo out into the pan. flatten and spread out the Chorizo with a fork.

Raise the heat(flame) to medium and cook while stirring for about 2 and a half minutes.

Crack about 5-7 eggs

add the eggs on top of the cooking chorizo and scramble/stir all of it together, once the eggs cook and everything has a orange-reddish tint to it, remove from heat.

Warm up some tortillas over the open flame (about 12 seconds each side)
